Presa

The presa comes from the neck area of the Iberico pig. Although the presa is in every pork neck, the portion of the Iberico pork is extremely high quality and tasty. In this high quality, the noble meat is also ideal as a carpaccio.

IBERICO PIG

The Iberian pig is a semi-wild pig breed that is particularly native to the Spanish regions of Andalusia and Aragón and the Portuguese Alentejo. The animals are smaller and more agile than the normal domestic pig breeds.
Some family farms keep their own pigs on more than three hectares of pasture per animal. The animals slowly eat their way out of fat on huge “dehesas” lined with stone and cork oaks. Since there is hardly any additional food, they have to find their own food.
Ibérico pork meat is considered to be the tastiest pork there is. The meat of Ibérico pigs has a particularly intense taste and cannot be compared with that of our domestic pigs.
