The ribeye
The ribeye is a cut from the front back and also known as entrecôte, prime rib. It is one of the most used muscle groups and is ideal for frying or grilling as a steak. The fine veins of fat from the ribeye make the meat juicy and provide an unforgettable taste experience.
Characteristic of the ribeye is not - as often assumed - the not always pronounced fat eye, but three or four muscle strands that make up the piece. In the center, enclosed by the high rib lid rich in connective tissue, lies the ribeye core. The largest muscle strand of the ribeye cut, which looks like an eye when you look closely.
Background
Wagyu Kobe Style Beef is characterized by a more intense fat marbling of the meat than is known from conventional cattle. It gives the meat excellent flavor and makes it incomparably juicy and tender.
