German organic beef

The Limousin cattle are raised in suckler cow husbandry in Burgstetten. That is, it is born naturally from the suckler cow and stays with her until it is sexually mature. From spring onwards, the herd stays in the Murr creek and in winter the cattle come to the stable with an outdoor run in Burgstetten. The animals are brought to slaughter by the farmer himself in Auenstein, only 23km away.

Beef fillet

The fillet is the beef’s most sought-after muscle. It’s soft as butter and lies under the back muscle – an area that is almost never used. Therefore, the meat is particularly fine-grained and lean. Only two percent of the beef can be used as fillet. In the USA, the fillet is also called tenderloin.
