Our Indian sun flakes are obtained exclusively by hand in a seawater saline in northeast India. The sun flakes are a real fleur de sel. On hot and windy days, the evaporation of sea water on the surface of the water creates small salt flowers, resembling a fine layer of ice. These are skimmed off by hand with a wooden trowel. So that our snow-white sun flakes can be made from a damp fleur de sel, the freshly harvested salt is dried under glass by the action of the sun. The structure of the salt changes as a result of the drying process. The moist fleur de sel becomes beautiful salt platelets, similar to the Murray River salt. Due to its special structure, this fleur de sel is rarely used for cooking, but primarily as table salt.
