preparation

Bring the steak to room temperature for about 30 minutes before cooking. Sear sharply in a pan or on the grill, then let it rest briefly. Score the fat edge slightly, but do not remove it. For the best enjoyment, we recommend rare to medium rare. Ideally, only use sea salt after frying.
