The Santoku knife is called the knife of the three virtues in Japan. The knife is considered the legendary Japanese version of the chef's knife. The three virtues are fish, meat and vegetables that the knife can handle with ease. Thus, the knife is ideally suited for work in the kitchen. The blade length of 18cm and the wide blade are ideal for flexible use.

What does X50CrMoV15 stand for?

"X50CrMoV15" or "CrMoV15" is printed on many high-quality knives or their packaging. This is an indication of the steel grade X50CrMoV15 used for the knife.
This is a rustproof knife steel that contains approx. 0.50% carbon and, as further alloy components, chromium, molybdenum and vanadium.
Due to the chromium content of approx. 15%, the knife is particularly resistant to corrosion, e.g. from fruit acids. So even if you cut sour fruit, for example, and don't wash and dry the knife immediately afterwards, you don't need to worry about rust with an X50CrMoV15 blade.
The molybdenum further strengthens the protection against corrosion and pitting and at the same time increases the strength of the steel. Cleaning in the dishwasher with its aggressive cleaning agents is usually no problem for an X50CrMoV15 blade.
Finally, adding a small amount of vanadium to the alloy increases the wear resistance and toughness of the steel.
With X50CrMoV15 you get a blade steel that is very robust and wear-resistant and at the same time corrosion-resistant and easy to care for.
Knives made from X50CrMoV15 have a fine grinding and long-lasting sharpness; In addition, such a knife can easily be re-sharpened later if necessary.
