In a remote mountain region in the southern foothills of the High Atlas Mountains in southeastern Morocco, where the mountains merge into the Sahara desert, is the small but traditional village of Mellha. Mellha is the Arabic word for salt. Here is an ancient well that was carved into the barren rocks centuries ago. Salty water is still drawn from this well today. This fountain can only be reached by a long and arduous walk in the middle of a barren rock landscape. Men scoop up the salty water in order to evaporate it in the laid-out salt marshes in the scorching sun. What remains is the coarse-grained salt of the “Mellaha Lbir” (salt well). It is dried and brought to the village as coarse-grained salt on pack donkeys. Centuries ago, caravans from the desert came to Mellha to exchange dates for the coveted salt. Due to the extremely inaccessible location of the salt well and the limited possibilities of the villagers, it is not possible to market this high-quality salt in large quantities.
