Dyke lamb
We guarantee that our animals come from the North Frisian marshes and salt marshes. The approximately five-month-old lambs with a live weight of around 80 pounds are selected, slaughtered and cut up according to our strict guidelines. This guarantees the unmistakable spicy and naturally slightly salty taste.
The North Frisian salt meadow lamb, primarily the Texel breed, traditionally grazes on North Friesland salt meadows and the dykes that border it. The ewes only eat the salty grass. The animals are always out in the fresh air; additional feeding is only provided in winter with hay stored by the farmers. The meat is naturally slightly salty, it is lean due to the movement of the animals, but still juicy and very tender. It is of absolute top quality and is also known in gourmet countries under the French name “agneau de prés salés”.
