Culinary Valentine’s Day trip for two

We all hope to be able to travel again soon and to escape the Corona issue. As a first glimmer of hope, we offer you a 3-course Valentine’s Day menu that will take you to France, Italy and Spain.

1st gear Italy

 

Buffalo tartare from the Italian water buffalo dressed with cognac sauce , with guacamole, Buffalo mozzarella cream , Shallot cubes & walnut-fig bread

2nd gear Spain

 

Sousvide cooked “ Abanico de Iberico Bellotta ”(ribs from acorn-fed Spanish country pigs) with Papas Arrugadas (Spanish boiled potatoes with lemon), Mojo Verde and Mojo Rojo

3rd gear France

 

Chocolate souffle with a liquid core on apple calvado ragout with fresh raspberries.

Sparkling France

1 bottle of Piper Heidsieck Essentiel Champagne blancs de blancs 0.75l

preparation

Preparation with instructions and video in very simple steps.

1st gear

Put walnut and fig bread in the oven for 10–15 minutes at 170 degrees.
Cut the shallots into fine cubes.
Tatar dressed with ketchup, mustard, cognac sauce and egg yolk.
Seasoning as desired.
Serving as in our photo.

2nd gear

Papas Arrugadas Heat in the oven at 170 degrees for about 8-10 minutes.
Place the pan with salted water and bring to the boil.
Swirl the potatoes in it until the water has evaporated and a salt crust forms around the potatoes.

Slowly fry the Abanico de Iberico Bellota on both sides until it is hot inside.

3rd gear

Put the chocolate soufflé in the oven at 170 degrees for about 8 minutes.
Stir the apple calvados gently
Place the apple ragout in the middle, arrange the souffle on top and decorate with berries.
