EXCLUSIVE C90 - hand-forged unique items made of real Damascus steel
The knives of the EXKLUSIV C90 series are the entry into the Nesmuk EXKLUSIV world made of hand-forged Damascus steel. The blade of the chef's knife consists of 210 layers and has a hardness of 62 to 63 HRC. Like all Damascus blades from Nesmuk, they are also made in our own forge.
The best tool steels with a high carbon content and rare metals such as tungsten create blades with the finest sharpness and a longer service life.
Unlike the EXKLUSIV C100 and C150 series, the blades are machine sharpened. The chef's knives of the C90 series have a hollow point on one side, as is typical for Nesmuk JANUS and SOUL chef's knives. The Slicer and Office knives have a very thin wedge edge that is perfect for filleting, parrying or peeling.
The handmade Damascus steel is superior to the knives of the SOUL and JANUS series made of patented niobium steel in terms of cutting ability and sharpness. Here, carbon steels still have an advantage over rust-resistant steels. And thanks to the vitreous NPC coating (Nesmuk Protective Coating) developed together with the Fraunhofer Institute for Chemical Technology, the Nesmuk EXCLUSIVE blades are also protected against corrosion *.

The lightest damask knife from Nesmuk
Real, hand-forged damask - and yet unusually light: The hollow grinding applied to one side on 210 layers of damask creates the unique appearance and outstanding cutting properties of the hand-forged blade. Weighing only approx. 130 g, depending on the handle material, the EXKLUSIV C90 chef's knife is the lightest knife in the collection. The 180 mm long blade makes the knife an all-rounder in every kitchen. Carbon content: 0.9%.
A new definition of sharpness
Hollow-ground on one side, the hand-forged damask unfolds its full potential: The combination of very fine carbon steel and extremely thin blade creates a sharpness experience that is second to none.
Forged by a master hand
The craftsmanship of real Damascus steel is reflected in the different appearance of the damask pattern: The back of the blade is flat-ground and reveals a different view of the damask structure than the hollow-ground front.
* The cutting bevel of the blade is not coated. You should therefore always clean your Nesmuk EXCLUSIVE knife after use. Clean the blade with washing-up liquid and under running water, then dry it off thoroughly. For special care, oiling the blade or the cutting bevel is also suitable from time to time. We recommend acid-free oils such as our camellia oil.
Please do not use cleaning sponges with abrasive fabrics, these can scratch and damage the NPC coating. Also avoid soaking dried-on food residues and do not place the knife in a water bath. Cleaning in the dishwasher damages every kitchen knife, especially knives made of carbon steel.
